
A fresh and herbaceous chicken breast sandwich on toasted ciabatta. Served with a light slaw.
Ingredients
-Boneless chicken breast
-Fresh herbs: parsley, rosemary
-Garlic
-Salt, Pepper
-Olive Oil
Pesto
-2 cups fresh basil
-2 tbsp toasted pine nuts
-1 tsp fresh squeezed lemon juice
-2 tbsp grated parmigiano reggiano
-1 clove garlic
-¼ cup extra virgin olive oil
-½ tsp kosher salt
-¼ tsp pepper
Steps:
1. Trim and butterfly boneless chicken breasts
2. Marinate for 1-2 hours with chopped parsley and rosemary, minced garlic, salt, pepper and olive oil
3. Grill chicken approx 4 minutes on each side
4. Lightly grill ciabatta till crisp (pressed down on grill if possible)
5. Spread fresh pesto on both halves of the bread
6. Assemble sandwich with chicken breast, cheese and baby spinach
